The first time I had a croissant I was twenty-one and spending a semester in Greece. I was walking home with a group of friends; it was late and we were all tipsy from a night at our favorite bar. The air was just starting to warm as we entered spring by the Aegean Sea and by then we’d all been there long enough that the constant hum of the sea had become white noise. The croissant was from the only bakery in the island town that stayed open into the night. It was covered in chocolate sprinkles (gasp!) and was soggy (gasp! gasp!). I was delighted. The croissant came on a sweet night like that, with friends and laughter, and topped off with a dessert I’d never had.
